Breakfast Granola


Preheat oven to 200F

4 cups gluten free rolled oats
1/2 cup maple syrup
1/4 cup melted coconut oil
1 tsp cinnamon
1/2 to 1 tsp ginger
1/8 to 1/4 tsp nutmeg
1/2 tsp sea salt
1 cup of coconut flakes or shredded coconut
1 cup chopped almonds or walnuts
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
Mix everything together in a large bowl. Spread on a parchment lined baking sheet and bake for 20 to 25 minutes at 200F. Stir and bake another 20 to 25 minutes.
Remove from oven and add: 1 cup raisins
and/or 1/2 cup goji berries (optional)
Enjoy with dairy free milk of your choice.

 

This granola is also delicious sprinkled on dairy free yogurt,  nice cream or all on it's own as a snack!
