My Version of Chana Masala

Okay, I love curry. 
I mean I really love curry.  This week I made a vegetable curry on Saturday and a Chana Masala curry on Monday.  That is true love.
Here is my recipe for Chana Masala.  So easy, so good, and so healthy!


1 tbsp virgin coconut oil
1 onion - chopped 
1/2 tsp sea salt
1 clove of garlic - minced
2 tsp curry powder (I used Simply Organic)
1 tsp turmeric (I used Simply Organic)
1 28oz can of  diced tomatoes
1 14 oz can of chickpeas (drained & rinsed)
1 - 2 cups spinach, stems removed and chopped
2 tbsp nutritional yeast (optional)
Splash of canned coconut milk, (Optional)

Melt the coconut oil over medium heat and add the onion.  Cook for 2 to 3 minutes and add the salt.  Continue cooking until the onions become translucent.  Add the garlic, turmeric and curry and cook until the spices are fragrant, but not burnt - about 3 minutes.

Add the tomatoes and chickpeas and continue cooking for about 15 minutes.  Add the spinach and cook til wilted.  Add the nutritional yeast and coconut milk (if using).  

Serve with rice or quinoa and, for a special treat, Naan bread.
